this is one i wrote up last year...
Homemade Cajun Garlic and Jalapeno Sausage
10lbs of pork butt or shoulder
1 lb of pork fat(recommended but optional...but if left out sausage will be alil dry if grilled well done)
2 heads of garlic
4 tablespoons of olive oil
3 bunches of green onions
1 small onion
1/4 bunch of parsley
32mm natural hog casing
10 jalapeno's
meat grinder(manual or electric)
sausage stuffer
meat mixer(optional)
Seasonings( to taste)
cayenne pepper
black pepper
tony chachere's or your favorite season-all
salt
garlic powder
(to find correct seasoning...take small pieces of mixture and fry in skillet and taste and then adjust seasonings)
very important lesson in cooking is......"you can always add....you cant take away"...so never over season until your have tasted and adjusted.
Cajun Garlic Sausage (can be called raw or green sausage)
cut meat up into chunks big enough to fit in your meat grinder.
grind garlic and onion and olive oil in food processor into almost a paste.
coarse chop green onions and parsley.
mix ingredients and seasonings up as much as possible before grinding.
grind ingredients with grinder with 1/4" hole plate.
rinse and soak hog casing in water for 15-20 minutes.
tip: when putting casing on stuffer horn...push out just a bit of sausage out of the horn and it will make sliding the casing on the horn much easier. ..without doing this its hard to slide the casing on the horn...i had to learn the hard way lol
fill stuffer up and tie end of casing ...start filling casing with sausage...much better to have 2 people.. one operating the stuffer and one holding the sausage and making links as it is stuffed...pinch off and twist 3 times where you want your link to end........on the 3rd link...cut and tie end of casing......repeat.
to make Jalapeno sausage just add the 10 finely chopped or food processed jalepeno's to garlic recipe or totally omit garlic and just add jalepeno..
