Small ones that I've caught on the peirs I just scale, gut and cut off head. Then I make cuts perpendicular to lateral line the length of the fish down to but not through the bone on both side. Batter and fry on both sides til done.
Now the bigger ones I've caught around the nearshore reefs I just fillet and fry them bad boyz!
